September is here, which means fall flavors are starting to make their way back into the kitchen. This month’s Perfect Form LA recipe combines seasonal ingredients with plenty of protein, fiber, and carbohydrates for a balanced meal that’s perfect for supporting an active lifestyle.
Our High-Protein Harvest Chicken & Sweet Potato Bowl is easy to meal prep, customizable, and packed with satisfying fall flavors.
Serves: 4 Prep Time: 15 minutes Cook Time: 25–30 minutes
INGREDIENTS
For the Bowls:
- 1½ lbs boneless, skinless chicken breast
- 2 medium sweet potatoes, peeled and cubed
- 4 cups chopped kale
- 2 medium apples, chopped
- ½ cup dried cranberries
- ½ cup chopped pecans
- 2 cups cooked quinoa
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon cinnamon
- Salt and pepper to taste
For the Maple Dijon Dressing:
- ¼ cup plain Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup
- 1 tablespoon apple cider vinegar
- 1–2 tablespoons water, as needed
- Pinch of salt and pepper
DIRECTIONS
- Preheat your oven to 425°F.
- Toss the cubed sweet potatoes with olive oil, cinnamon, salt, and pepper. Spread them evenly on a baking sheet and roast for approximately 25–30 minutes, flipping halfway through, until tender and lightly browned.
- While the sweet potatoes cook, season the chicken breast with garlic powder, smoked paprika, salt, and pepper. Grill or cook in a skillet until the chicken reaches an internal temperature of 165°F. Allow it to rest for a few minutes before slicing.
- Whisk together the Greek yogurt, Dijon mustard, maple syrup, apple cider vinegar, salt, and pepper. Add a little water until the dressing reaches your preferred consistency.
- Divide the cooked quinoa and kale among four bowls. Top each with roasted sweet potato, sliced chicken, chopped apple, dried cranberries, and pecans. Drizzle with the Maple Dijon Dressing and enjoy!
