INGREDIENTS (SERVES 4)
For the Salmon:
- 4 salmon fillets (5-6 oz each)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
For the Strawberry Avocado Salsa:
- 1 cup strawberries, diced
- 1 avocado, diced
- 1/4 cup red onion, finely diced
- 1 tbsp fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
DIRECTIONS
- Preheat grill or grill pan to medium-high heat.
- Brush salmon with olive oil and season with garlic powder, paprika, salt, and pepper.
- Grill salmon for 4-5 minutes per side or until cooked through.
- While the salmon cooks, combine strawberries, avocado, red onion, cilantro, lime juice, and a pinch of salt in a bowl.
- Top each salmon fillet with the strawberry avocado salsa and serve immediately.
